White sugar:Also called as regular sugar, table sugar or granulated sugar. It is the most commonly used sugar. It is extracted from either sugar cane or sugar beets. It can be easily measured and dissolves well into beverages and other liquids. It is used to decorate desserts by sprinkling on top and castor sugar or superfine sugar is normally used to make meringues, mousses and custards.
Brown sugar: Brown sugar is sucrose sugar product with a distinctive brown color due to the presence of molasses. Nutritionally brown sugar and white sugar are not much different. The real difference between the two are taste and its effect on baked goods. Due to its molasses content, brown sugar is rich in certain minerals such as calcium, potassium, iron and magnesium.
